Ukrainian Christmas Borscht recipe

While Ukrainians enjoy meat as a normal part of their hearty diets, traditional Christmas meals are celebrated with meatless meals. The Christmas borscht is made without meat but remains a hearty, filling soup for chilly nights.


2 tablespoons olive oil
1 medium onion, chopped
1 cup sliced mushrooms
5 cups vegetable broth
2 cups shredded cabbage
2 medium beets, finely chopped
1 medium potato, peeled, cubed
1 carrot, sliced
¼ cup tomato juice
1 bay leaf
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh dill
2 to 4 tablespoons lemon juice, to taste
Sea salt and black pepper, to taste


1) Heat oil in a large pot over medium. Add onion and mushrooms; cook until softened and slightly golden, stirring occasionally, about 7 minutes.

2) Add broth, cabbage, beets, potato, carrot, juice, and bay leaf; bring to a boil over high heat. Reduce to a simmer and cook, covered, until vegetables are very soft, about 30 minutes.

3) Add parsley and dill; season to taste with lemon juice and seasonings.
